Meal Plan – Week 4

Hello and welcome to our fourth week of meal planning. I can’t believe how much money we have saved by meal planning – and sticking to it!

That said, last week didn’t quite work out as it should have. The day I had planned to do risotto I realised at the last minute I didn’t have any arborio rice,  so I had to change plan and we made do with spaghetti and a jar of sauce I had in the cupboard. I’ve also not had time to make the soup I had intended to, so there will likely be a little more food waste than I had wanted.

The win of the week though was the potato and split pea dal– it was really tasty and there is enough left for Damian to take a portion to work this week too. It’s one we will have again.

This week I am going to try and use up some bits from the freezer so our plan is looking like this:

Monday – Pressure cooker risotto

Tuesday – Slow cooker chicken curry

Wednesday – Spaghetti and meatballs

Thursday – vegetable fajitas and potato wedges

Friday – Fish cakes, chips and veg

Fingers crossed we manage to stick to the plan better this week. I also have a load of onions to use up – for some reason I bought a bag or red onions as well as normal brown onions so I’ll probably make a cheese and onion pie with some and then a soup with the rest. If you know any good onion recipes let me know. What’s on your plan?

    Meatballs are a favourite here, the boys love them. I really like french onion soup, I go through tonnes of onions though so never really have any left!

    French onion soup? Onion bhajis? caramelised onion and goat’s cheese tart? I have some split peas left after making pea soup this week so I’ll have to investigate your recipe 🙂
