So… last week I meal planned and it was very much based on using up what we already had in. I did pretty well and only spent an extra £15 or so on food – mostly bread, milk and fruit and veg so I was pretty pleased.
My new slow cooker arrived and was promptly put to use with the curry – It was made using a packet mix I had found when clearing the cupboards. I don’t use packet mixes often, I just tend to have a couple in for when I’m lacking inspiration. Anyhow, it was really tasty and is one we will have in again I am sure.
I stuck to the meal plan all week, with the exception of Friday. Damian went to his parents Friday evening and took them fish and chips so the children and I had a quick tea – we were all pretty tired after a hectic week- and swapped the cheese and onion pie to Saturday evening instead.
I also managed to use up some carrots I had left over by making a soup for Saturday – basically 450g carrots, 2 onions, stock cube, 1.75 pts of water and a tea spoon of ground cumin. Pop it all in the slow cooker for a few hours and then whizz with the blender when done. Perfect way to use up old veg.
This week I have the following planned:
Sunday – Roast Dinner – (Beef for Damian slow cooked)
Monday – Jacket potatoes – I’m going to try these in the slow cooker
Tuesday – Veg soup and warm crusty bread
Wednesday – Damian and I are out in the evening so not entirely sure what we will do food wise, either something quick like pasta or something with veg
Thursday – Jalapeno Quiche with potatoes and veg
Friday – Fish & Chips / Egg & Chips / Cheese & Onion Pie and potatoes
Next week I’m hoping to try another curry of some sort in the slow cooker as well as maybe a veg casserole or similar.
