Welcome to week three of our meal planning – already we are seeing the benefit of planning our weekday meals – much less money spent on food and much less waste. I am also being a bit more creative with the food waste and making up soups. I made a lovely vegetable and lentil soup earlier this week which made five portions – enough for us to eat for dinner as well as Damian having a portion to take to work the next day. When I get a chance I’ll share the recipe here.
I did jacket potatoes in the slow cooker last week – I wrote this up (see here) as so many people had asked me about this on here and twitter. They were great and will be something I do again – I liked that I could pop them in the slow cooker and just leave. Usually I have to time putting them in the oven otherwise they’re not cooked enough for us.
Anyhow, our plan for this week is as follows:
Monday – Potato Dal with Spicy Shallots
Tuesday – Homemade pizzas
Wednesday – Slow cooker Sausage Casserole
Thursday – Risotto (cooked in a pressure cooker)
Friday – Fish/Eggs/Pie and chips with veg
I will have some carrots and celery to use up this week too so I plan to make another batch of soup to use those up.
