Amazingly, last week I managed to stick to the plan. I had an awful head cold and felt pretty ropey most of the week. That added with Damian being away and then having to work some long hours I felt pretty run down.
The surprise hit of the week were the homemade bean burgers. These were basically a bag of frozen broad beans mashed up with onion and breadcrumbs and then fried. I’ll make these again but next time I’ll add some chilli or cumin to give it a bit of a kick. A good way to sneak some veg in and Mr D and Mr H enjoyed them. Miss E has been a bit off colour this last week. I can’t decide if it’s just that she is *really* tired or if she is coming down with something.
This week the plan is a bit different. Today I am starting an evening class so I won’t be home to enjoy dinner with Damian and the children. I think I’ll just take a sandwich to eat before the class starts and then perhaps have some toast when I get home. Thursday is fast turning into a ‘quick dinner’ day as it’s our busiest day of the week. The children have football in the morning, then home for lunch before we head back out again an hour or two later for swimming. By the time we are home from swimming they are ravenous so it’s usually a quick to make dinner that we do.
So… this week our plan looks like this:
Monday – Pesto Pasta with chopped tomatoes and peas
Tuesday – take away night
Wednesday – Quiche and salad with sweet potato fries
Thursday – Sausage casserole in the slow cooker with plenty of veg
Friday – Fish/Pie and chips
Next weekend we have a busy one as on Saturday we have a large family meal and Sunday is, of course, Mother’s Day. I’m looking forward to getting out for a walk somewhere on Sunday with the children and Damian.
